Ingredients

2 cups pulled pork. chopped

16 oz San Marzano tomatoes, pureed

1/2 cup red wine

1 tbsp tomato paste

1 tbsp olive oil

1 carrot, finely diced

1 stalk of celery, finely diced

1/2 onion, finely diced

1 clove garlic, minced

1 cup water

Method

Heat olive oil in a large pan over medium heat and saute the carrot, celery, onion, and garlic until soft, 10-15 minutes. This is called Soffrito

Add the wine and reduce by 1/2.

Add the tomato paste, San Marzano tomatoes, and 1 cup of water and simmer for 10-15 minutes.

Add the pork and simmer for another 5 minutes.

Add preferred pasta and toss to coat.
