Ingredients

1 small onion

3 jalapeno peppers, diced

1/2 cup heavy cream

8 oz Monterey jack cheese, cubed

4 oz white cheddar cheese, cubed

1 tbsp chopped cilantro

1tbsp canola oil

Method

Cut the onion in half and grate fine.

Heat oil in a large skillet, add jalapeno and onion and saute for 3-5 minutes until softened.

Add cream and cheeses and stir until melted and combined well.

Add cilantro and combine.

Pour into a bowl and serve.

Note: This is also served topped with pico de gallo. Chop the other half of the onion and dice a tomato and top queso.
