Ingredients

8 oz ground beef

8 oz ground veal

8 oz bulk sweet Italian sausage or ground pork

1 carrot, chopped fine

1 shallot, chopped fine

3 cloves of garlic, minced

Pepper

1 28 oz can San Marzano tomatoes, pureed.

1 cup chicken stock

1 cup dry red wine

1/4 cup tomato paste

1 tbsp oregano

8 basil leave, torn into small pieces

2 tbsp olive oil

Method

In a dutch oven heat the olive oil over medium-high heat.

Add the beef, veal, sausage or pork and cook until no longer pink.

Add the carrot, shallot, garlic, and oregano, reduce heat to medium, and cook until carrots are softened, about 10 minutes.

Add the red wine and the tomato paste, mix well, and cook an additional 1 minute.

Add the tomatoes, chicken stock, basil, and a pinch of pepper, and simmer until you are ready to serve with pasta.
