Ingredients

1 tbsp olive oil

1 onion, diced

3 stalks celery, diced

3 carrots, diced

2 4 oz cans of chopped green chilis

1 tsp oregano

1 tsp cumin

1/4 tsp cayenne pepper

3 15oz cans great northern beans, drained and rinsed

6 cups chicken broth, more if needed

4 cups shredded chicken

Method

Heat oil in a large pot over medium-high heat, add celery and carrots and saute for 5 minutes.

Add the onion and saute for 5 more minutes.

Add the chilis and spices and cook an additional 5 minutes.

Add the beans and broth, bring to a simmer, and cook for 20-25 minutes.

Add the shredded chicken, cook an additional 5 minutes, and serve.
