Ingredients

14 oz rigatoni or tube pasta

3 Italian sausages, casings removed and chopped

1 tbsp olive oil

8 oz red wine

2 tbsp tomato puree

1 1/3 cups grated parmesan cheese

1 1/3 cups grated pecorino romano cheese

Salt and pepper

Method

Bring a pot of salted water to a boil and cook the rigatoni to al dente.

Meanwhile, in a large skillet heat the olive oil over medium-high heat.

Add the sausage and cook until browned, adding 1-2 tablespoons of wine at a time. Add more wine when the previous wine evaporates.

Drain pasta and add to the pan with the sausage.

Remove from heat and add parmesan cheese and stir well.

Add the pecorino cheese and stir well.

Add the tomato paste, salt and pepper to taste, and stir until smooth.

Serve with extra cheese and olive oil for drizzling.
